1. Ingredients for Singapore-Style Fried Rice Vermicelli:

Servings for 2-3 people

  • YUM YUM Dry Vermicelli: 1 pack/300g
  • Chicken eggs: 2
  • Chinese sausage (Lap Cheong): 100g
  • Shrimp: 100g
  • Carrot: 2
  • Cabbage: 100g
  • Onion: 2
  • Curry powder: 25g
  • Spices: salt, pepper, sugar, cooking oil, soy sauce, oyster sauce

2. Cooking instructions

Step 1: Prepare ingredients

  1. Clean the shrimp thoroughly, peel them, remove the heads and black veins.
  2. Thinly sliced Chinese sausage.
  3. Peeled carrots, fibroblasts.
  4. Sliced cabbage.
  5. Cut the onion into wedges.
  6. Beat the eggs.
  7. Chopped green onions.
  8. Minced garlic.

Step 2: Cook the Fresh Vermicelli

  1. Soak the fresh vermicelli in water for 4-6 minutes before boiling (while waiting for the water to boil)
  2. Boil in boiling water for about 5-7 minutes (the water level must completely submerge the fresh vermicelli in the pot)
  3. Rinse again with cold water 2-3 times

  4. Add 30ml water, 25g curry powder, 3 tablespoons oyster sauce, 3 tablespoons soy sauce, stir-fry until vegetables are soft.
  5. Put the soaked dry noodles in the pan and stir-fry with the vegetable mixture.
  6. Season to taste.

Step 4: Fry eggs and Chinese sausage

  1. Put 2 tablespoons of cooking oil in another pan and fry the eggs thinly.
  2. Fry the Chinese sausage until brown.

Step 5: Complete the dish

  1. Put stir-fried vermicelli on a plate, arrange eggs and sausage on top.
  2. Sprinkle with chopped green onions and ground pepper. Serve with soy sauce with fresh chilli or chili sauce of your choice.
