1. Ingredients for cooking vegetarian soy sauce vermicelli
Servings for 2-3 people
- YUM YUM Fresh Vermicelli: 1 pack/300g
- Tofu: 2 pieces
- Cucumber: 2
- Lettuce/Aromatic herbs/Fish mint: a little
- Peanuts: 50g
- Chili: 2
- Soy sauce: 4-5 tablespoons
- Cooking oil: 100ml
- Salt: 1 teaspoon
- Sugar: 3 teaspoons
2. Cooking instructions
Step 1: Prepare ingredients
- Vegetables, remove yellow leaves and soak in salt water for about 10 minutes. Take it out, rinse with water, cut into small pieces.
- Wash the cucumbers, peel them, and cut them into strips.
- Remove the stems from the chili peppers, wash them thoroughly, and chop them finely.
- Peel the garlic cloves and mince them finely.
Step 2: Cook the Fresh Vermicelli
- Soak the fresh vermicelli in water for 4-6 minutes before boiling (while waiting for the water to boil)
- Boil in boiling water for about 5-7 minutes (the water level must completely submerge the fresh vermicelli in the pot)
- Rinse again with cold water 2-3 times
- Then drain it
- Maybe you don’t know: With just 300g-350g of dry bun, you can cook about 1 kg of fresh vermicelli, enough for 2-3 people.
Step 3: Roast the Peanuts
- Put the peanuts in a pan and roast them with a little salt for 10 minutes.
- Turn off the heat and let it cool down, then remove the peanut shells.
- Crush the peanuts into halves, but don’t crush them too finely.
Step 4: Fry tofu
- Fry the tofu for about 3-5 minutes over medium heat.
- Once one side of the tofu is golden brown, flip it over and continue frying for another 5 minutes.
- Depending on your desired level of crispiness, you can fry the tofu for an additional few minutes.
Step 5: Make the soy sauce dipping sauce
- Add 8 tablespoons of soy sauce to a bowl.
- Add 1 tablespoon of sugar and season to taste.
- Add minced chili peppers and garlic to the soy sauce bowl.
- Stir well
Step 6: Complete the dish
- Arrange the fresh vermicelli, fried tofu, and accompanying vegetables in the order they are listed, and sprinkle crushed peanuts on top. Drizzle with soy sauce and enjoy.
