1. Ingredients for Singapore-Style Fried Rice Vermicelli:
Servings for 2-3 people
- YUM YUM Dry Vermicelli: 1 pack/300g
- Chicken eggs: 2
- Chinese sausage (Lap Cheong): 100g
- Shrimp: 100g
- Carrot: 2
- Cabbage: 100g
- Onion: 2
- Curry powder: 25g
- Spices: salt, pepper, sugar, cooking oil, soy sauce, oyster sauce
2. Cooking instructions
Step 1: Prepare ingredients
- Clean the shrimp thoroughly, peel them, remove the heads and black veins.
- Thinly sliced Chinese sausage.
- Peeled carrots, fibroblasts.
- Sliced cabbage.
- Cut the onion into wedges.
- Beat the eggs.
- Chopped green onions.
- Minced garlic.
Step 2: Cook the Fresh Vermicelli
- Soak the fresh vermicelli in water for 4-6 minutes before boiling (while waiting for the water to boil)
- Boil in boiling water for about 5-7 minutes (the water level must completely submerge the fresh vermicelli in the pot)
- Rinse again with cold water 2-3 times

Step 3: Stir-fry vermicelli

- Add the shrimp to the wok or skillet and stir-fry until they are almost cooked through and turn pink.
- Add carrots, cabbage, and onions and stir-fry together.
- Add 30ml water, 25g curry powder, 3 tablespoons oyster sauce, 3 tablespoons soy sauce, stir-fry until vegetables are soft.
- Put the soaked dry noodles in the pan and stir-fry with the vegetable mixture.
- Season to taste.
Step 4: Fry eggs and Chinese sausage
- Put 2 tablespoons of cooking oil in another pan and fry the eggs thinly.
- Fry the Chinese sausage until brown.
Step 5: Complete the dish
- Put stir-fried vermicelli on a plate, arrange eggs and sausage on top.
- Sprinkle with chopped green onions and ground pepper. Serve with soy sauce with fresh chilli or chili sauce of your choice.
